How to find the level of SharePoint running on your servers after installing Updates/Patches
One can find out the version of WSS 3/MOSS by going to the “Site Settings” of either the Central Admin or any WSS/MOSS site. There, above the action links, you can find the version. Alternatively open IIS Manager and look under “HTTP headers” in the properties of any MOSS web site.
Following is the table listing version changes to MOSS 2007 and/or WSS 3.0, after updates/patches are applied. I do not have any information on the patches before SP1.

To confirm that a particular service pack is install on SharePoint Server you must either check the version numbers of specific dlls as specified in the related Microsoft Knowledge Based article or select the Show Updates check box in Add and Remove Programs.
To find out the SharePoint version by querying the SharePoint database, refer to David Hunter’s blog: http://www.davehunter.co.uk/Blog/Lists/Posts/Post.aspx?ID=77.
